Cream Cheese Chicken Taquitos

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup sour cream
  • 1/3 cup mild salsa
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 3 cups cooked shredded chicken
  • 12 (6 inch) flour tortillas
  • 3 tablespoons vegetable oil

Instructions

  1. Place your cream cheese in a large bowl and let it rest until fully at room temperature. Press it with a spoon to ensure it gives easily for a smooth mixture.
  2. Beat the softened cream cheese, sour cream, and salsa together until nicely combined. Stir in the garlic powder, cumin, and chili powder until the mixture is deeply aromatic.
  3. Add the shredded chicken, Monterey Jack, and sharp cheddar to the spiced cream cheese. Fold everything together gently until every piece of chicken is heavily coated.
  4. Stack the tortillas and cover them completely with a damp paper towel. Microwave the stack for roughly thirty seconds to make them wonderfully pliable.
  5. Spoon two to three tablespoons of the filling onto the lower third of a warmed tortilla. Roll the tortilla away from you as tightly as possible like a cigar.
  6. Arrange the rolled taquitos seam side down and lightly brush the tops with vegetable oil. Cook them using your preferred method until they are incredibly crisp and beautifully golden brown.

Notes

If you are short on time, microwave the cream cheese on a microwave-safe plate for 10 to 15 seconds to soften it quickly. Freshly grating your cheddar and Monterey Jack from a block will give you a significantly gooier and more velvety melted center. To bake: 400°F for 15 minutes. To air-fry: 380°F for 8 minutes.
