Ritz Cracker Chicken Casserole

Ingredients

  • 4 cups Cooked chicken, shredded
  • 1 (10.5 ounce) can Condensed cream of chicken soup
  • 1 cup Sour cream
  • 1/2 cup Whole milk
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/4 teaspoon Black pepper
  • 2 sleeves Buttery round crackers, crushed
  • 8 tablespoons Unsalted butter, melted
  • 1 tablespoon Fresh parsley, chopped

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly coat a 9x13 inch baking dish with non-stick cooking spray or a thin layer of butter. Set the prepared dish aside on your counter.
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, and whole milk. Sprinkle in the garlic powder, onion powder, and black pepper. Use a silicone spatula to gently fold everything together until the mixture is uniform and creamy. Transfer the chicken mixture into your prepared baking dish and spread it into an even layer.
  3. Place the buttery round crackers into a large zip-top bag and gently crush them with a rolling pin or your hands. Pour the crushed crackers into a medium bowl and pour the melted butter over the top. Toss the mixture with a fork until all the dry crumbs are moistened. Sprinkle the buttery crumbs evenly over the top of the chicken mixture in the baking dish. Garnish lightly with the chopped fresh parsley for a pop of color.
  4. Place the baking dish uncovered on the middle rack of your preheated oven. Bake for 25 to 30 minutes. Watch closely during the last 5 minutes to ensure the topping does not burn. Remove the casserole from the oven carefully. Let the dish rest for at least 5 to 10 minutes before serving.

Tip: If using a glass baking dish, check for bubbling edges earlier as it holds heat longer than metal. A rotisserie chicken is the ultimate shortcut for shredded meat.
