Waffles Without Milk

Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 1 teaspoon Kosher salt
  • 2 cups Water
  • 1/3 cup Vegetable oil
  • 2 large Eggs, beaten
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon (optional)
  • 1/2 cup Semi-sweet chocolate chips (optional)
  • 1/2 cup Fresh blueberries (optional)

Instructions

  1. Turn on your waffle maker to medium-high heat and wait for the indicator light. Carefully brush the hot cooking plates with a very thin layer of vegetable oil to prevent sticking.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and kosher salt. Mix them vigorously until the mixture looks uniform and aerated like soft sand.
  3. Grab a medium bowl and briskly whisk the water, oil, beaten eggs, and vanilla extract. Beat them together until the mixture turns pale and completely smooth.
  4. Pour the wet liquids into the center of the dry flour mixture. Use a silicone spatula to gently fold everything together just until the dry pockets disappear.
  5. Ladle the batter directly onto the center of your hot iron and close the lid tightly. Cook until the steam stops billowing out and the edges look deeply golden brown.
  6. Carefully lift the crispy waffles out and place them directly on a wire rack inside a warm oven. This crucial step keeps them perfectly crunchy while you finish cooking the rest of the batch.

Notes

Tip: Leaving a few visible flour lumps ensures your waffles stay exceptionally tender and fluffy on the inside. You can also effortlessly swap regular tap water for unflavored sparkling water; the little carbonation bubbles create tiny air pockets throughout the batter for an unbelievably airy and light interior.
